If your looking to spice up your Thanksgiving holiday with something new, then this Jerk Turkey recipe is perfect for you.

Jerk Base Marinade

2/3 cup Vinegar

1/2 cup Chicken stock

1 Orange, juiced

1 Lime, juiced

1/3 cup Soy sauce

1/3 cup Olive oil

1/2 Habenero pepper, with seeds

1 1/2 tbsp Brown sugar

1 1/2 tsp Salt

1/2 tsp Black pepper

1 1/2 tsp Thyme

1 1/2 tsp Cinnamon

3/4 tsp Nutmeg

1/4 tsp Ground cloves

1 1/2 tbsp Allspice

1 1/2 tbsp Ginger, minced

1/4 cup Darl lager beer

6 pcs. Green onions, leaves and bulbs

1 1/2 tbsp Garlic, miced

Jerk Rub

1 tbsp Garlic powder

2 tsp Cayene pepper

2 tsp Onion powder

2 tsp Dried thyme

2 tsp Sugar

2 tsp Salt

1 tsp Paprika

1 tsp Allspice

1/2 tsp Black pepper

1/2 tsp Nutmeg

1/4 tsp Cinnamon

Caribbean BBQ Sauce

2 cups Bourbon BBQ Sauce

2 cups Mango Puree

1 Habenero, with seeds

1/4 cup Jerk spice rub

1 cup Pineapple juice


1 12-15 lb Turkey

1/2 Onion, coarsely chopped

1 Red bell pepper, coarsely chopped

1 Apple, quarted

1 can Pineapple, diced

1 sprig Rosemary

1 sprig Thyme

1 stick Butter, melted

1/4 cup Olive oil


Jerk Base Marinade

1Add all ingredients into a blender or food processor; blend until liquefied and fully combined. Place into a bowl and set aside.

Caribbean BBQ Sauce

1Add all ingredients into a blender or food processor; blend together until thoroughly combined. Place in a bowl and set aside.

Jerk Spice Rub

1In a small bowl combine all ingredients.


1Remove giblets and all packets from turkey, then clean and rinse turkey.

2Place turkey into a large pan. Season inside the turkey with jerk rub, then gently peel layer of skin covering breast and season meat with rub.

3Inject turkey with jerk base marinade. Be sure to inject all areas of turkey. Next stuff turkey with apples, pineapple, onions, bell peppers, rosemary, and thyme.

4Pour melted butter and olive oil all over turkey. Next liberally season outside of turkey with jerk rub. Cover with plastic wrap and marinate turkey for at least 4 hours, however for best results, marinate for 3 days.

5When turkey is ready, add more olive oil if skin is too dry, then place turkey into a pre-heated oven at 425 degrees for 15- 20 mins, or until skin browned. Next lower oven temp. to 350 degrees, then bake turkey for about 18 mins per lb or until internal temperature reaches 165 degrees. Be sure to baste turkey every 10- 15 mins.

6At the halfway mark, apply Caribbean BBQ sauce. If desired, add more sauce once turkey is out of oven. Allow turkey to rest for at least 5 mins before cutting.
