1Wash potatoes. In a large pot, boil potatoes until fork tender. Remove potatoes from water and allow to cool completely. Refrigerate for 2 hours. This part can be made the night before.
2Slice potatoes into quarter wedges. Season with cajun rub, seasoned salt, and pepper.
3In a skillet or saute pan under medium- high heat add butter. Once butter is melted add potatoes. Cook potatoes until golden brown and heated through, approx. 7- 8 mins, turning over potatoes as necessary.
4Once potatoes are done, sprinkle cheese on top. Continue cooking for 1- 2 minutes, or until cheese has melted. Next add parsley and your ready to serve.
Try adding some caramelized onions for extra goodness.
