The weather is hot and light, refreshing meals are definitely needed! Our family enjoys this arugula salad nearly every night and it just doesn’t get old. It’s loaded with a myriad of healthy ingredients and so many lovely layers of flavor, it’s a dish we all look forward to.

Getting creative with salad recipes can be difficult. A healthy salad recipe that is also flavorful can be difficulty to come up with. If you’re looking for a delicious, light salad that will satisfy your hunger, this is the one you’ve been looking for!

Arugula has a bitter, almost peppery taste to it and goes so well with nuts which add a creamy, earthy element. The sundried cranberries add a nice layer of sweetness and the tomatoes brighten up the dish with a cleansing acidity.

  1. Add rinsed arugula to bowl
